Ingredients

  • 120 g butter
  • 100 g flour
  • 50 g ground almond kernels
  • 1 tsp Baking powder
  • 0.5 tsp orange zest (unprocessed)
  • 3 eggs
  • 2 tbsp honey
  • 20 ml rum
  • 100 g sugar
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 160°C with fan and top heat. Grease the depressions of a madeleine pan with butter.

    Melt the butter. Mix the flour with almonds, baking powder, and orange zest. Beat the eggs with honey, rum, and sugar until creamy. Add the melted butter and flour mixture, whisking until smooth.

    Fill the pan cavities about 3/4 full and bake for approximately 15 minutes until golden brown. Carefully remove from the pan and cool on a wire rack. Dust with powdered sugar and serve with tea if desired.
