- 2 Spring Onions
- 1 ginger (walnut-sized piece, fresh)
- 1 lemon
- 250 g zucchini
- 2 tbsp olive oil
- Salt
- pepper (ground)
- 1 Garlic clove
- 2 tbsp white wine vinegar
- 3 tbsp vegetable broth
- sugar

Wash and trim the spring onions, split them lengthwise and cut the white and light green parts into very fine strips. Place onion strips in a bowl.

Peel the ginger and slice it thinly. Wash the lemon hot and slice it.

Wash, trim, and cut the zucchini diagonally into thin slices. In hot olive oil, fry each side for about 2 minutes, season with salt and pepper, and add to the spring onions. Add ginger and lemon slices to the pan fat and sear briefly on both sides. Press in the garlic. Pour in vinegar and broth, season with salt, pepper, and a pinch of sugar, then mix well. Arrange on plates for serving.
