Stuffed Zucchini with Feta and Tomatoes

Ingredients
- 3 shallots
- 3 Garlic cloves
- 2 Tomatoes
- 6 tbsp Olive oil
- Salt
- black pepper (freshly ground)
- 120 g feta
- 16 small round zucchini

Peel and dice the shallots and garlic. Wash and chop the tomatoes. Heat 2 tbsp olive oil in a pot, sauté the shallots and garlic until translucent. Add the tomatoes, stir briefly, season with salt and pepper, and let cool to room temperature. Dice the feta and mix into the cooled tomato mixture.

Preheat the oven to 180°C (350°F) with upper and lower heat.

Wash the zucchini, cut off a top slice from each, and hollow out the flesh. Fill the cavities with the feta-tomato mixture and replace the tops. Brush the stuffed zucchini with the remaining olive oil, place in a baking dish, and bake for about 30 minutes.
