- 400 g Potatoes
- 2 red bell peppers
- 2 green bell peppers
- 150 g broad beans
- 200 g shiitake mushrooms
- 2 tbsp oil
- Salt
- Pepper (freshly ground)
- 2 stalks Thai basil

Wash, peel, and cut the potatoes into 0.5 cm thin strips. Wash the bell peppers, halve them, remove seeds and white membranes, and slice into 0.5 cm strips. Clean the shiitake mushrooms and slice them. Rinse the broad beans, trim ends, and split lengthwise.

Heat oil in a pan and sauté the vegetables with the mushrooms for 3-5 minutes. Deglaze with vegetable broth, season with salt and pepper, and simmer for 5-10 minutes. Wash, dry, and shake the Thai basil; pick off leaves. Transfer the finished dish to a bowl and serve garnished with basil leaves.
