Zucchini strips with tuna

Ingredients

  • 800 g tomatoes
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 2 tbsp capers
  • 300 g tuna in its own juice (drained weight; can)
  • Salt
  • Pepper
  • 600 g large zucchini (2 large zucchinis)
  • a splash of lemon juice
  • 20 g Parmesan

Instructions

    Blanch tomatoes with boiling water, shock them in cold water, peel, quarter, seed and dice. Peel onion and garlic and finely dice. Heat 1 tbsp oil in a pan and sauté onion and garlic over medium heat until translucent. Add tomatoes and let simmer for about 10 minutes until slightly thickened. Add capers and well-drained tuna to the sauce and warm through. Season with salt and pepper.

    Meanwhile wash, trim and cut zucchini lengthwise into fine strips or use a spiralizer. Heat remaining oil in another pan and sauté zucchini noodles for about 1 minute. Season with salt, lemon juice and pepper and arrange on four plates. Pour sauce over and sprinkle parmesan on top.
