Ingredients

  • 2 yellow chicories
  • 2 red chicories
  • 6 tbsp Olive oil
  • Salt
  • Pepper
  • 5 ripe figs
  • 2 bunches arugula
  • 2 tbsp white balsamic vinegar
  • 2 tbsp toasted almond slivers

Instructions

    Preheat the oven grill. Trim, clean and halve the chicory lengthwise; place cut side up on a parchment-lined tray. Drizzle with 2 tbsp olive oil, season with salt and pepper, and grill for 5–8 minutes under the hot grill.

    Meanwhile, clean and quarter the figs lengthwise. Wash and dry the arugula. Mix remaining olive oil with vinegar, salt, and pepper. Spread arugula on four plates; top each with fig quarters and two chicory halves. Drizzle with vinaigrette and sprinkle almond slivers.
