Mandarin Salad with Seaweed

A refreshing salad featuring fresh sprout vegetables and seaweed. Try this and other recipes from Spoonsparrow!

Ingredients

  • 1 package dried wakame seaweed (56 g, Asialaden)
  • 10 g ginger
  • 1 clove garlic
  • 2 tbsp Soy sauce
  • 2 tbsp rice vinegar
  • 4 tbsp peanut oil
  • 4 tbsp sesame seeds
  • 2 chicory heads
  • 4 mandarins

Instructions

    Place the wakame in a bowl, cover with warm water and soak for 5-10 minutes. Peel and grate or press the ginger and garlic. Mix with soy sauce, rice vinegar, peanut oil, and sesame seeds. Add a splash of soaking water to the seaweed and let marinate for about 30 minutes.

    Wash the chicory and separate the leaves. Peel the mandarins around the edges with a sharp knife and cut the fruit into pieces. Squeeze juice from the remaining peels and add to the seaweed. Arrange the seaweed and mandarins in bowls, drizzle the dressing over them, arrange the chicory leaves around, and serve.
