Zucchini Salad with Fish

Ingredients
- 1 lemon
- 200 g Fish fillet (Halibut or Cod)
- Salt
- 3 tbsp oil
- 2 small zucchini
- 1 small onion
- 1 bunch fresh mixed salad herbs (large)
- freshly ground white pepper
- 3 tbsp sour cream
- Dill flowers
Instructions

Cut the lemon in half. Juice one half, peel and fillet the other half, removing seeds and white membranes.

Rinse the fish fillet, lightly salt it, place it in a small pot, drizzle with 1 tsp oil and 1 tsp lemon juice. Cover and gently heat over low heat for 5-10 minutes until steamed; remove from heat and let cool.

Meanwhile clean, wash and shave the zucchini into thin slices.

Peel the onion, halve it and slice crosswise into thin strips.

Wash the herbs, shake dry and finely chop.

Heat 1 tsp oil in a pan and sauté the onion and zucchini slices for 2-3 minutes. Remove from heat, season with salt and pepper, drizzle with 2 tbsp lemon juice, and fold in the chopped herbs.

Whisk sour cream with the remaining lemon juice and oil, season with salt and pepper, then pour over the zucchini.

Cut the fish fillet into bite‑sized pieces and mix with the lemon slices. Layer alternately with the sautéed zucchini in a bowl and let cool well.

Serve garnished with dill flowers.
