- 250 g mixed wild herbs (e.g., sorrel, arugula, dandelion, chamomile)
- 2 hard‑boiled eggs
- 1 tsp Mustard
- 1 tsp apple syrup
- 1 tbsp balsamic vinegar
- 1 tbsp Lemon Juice
- 5 tbsp Rapeseed Oil
- 2 tbsp pumpkin seed oil
- Salt
- Pepper (freshly ground)

Wash the herbs and shake dry. Peel the eggs and slice them. Whisk all vinaigrette ingredients together, seasoning with salt and pepper.

Just before serving gently toss the salad with the vinaigrette, plate it, and arrange the egg slices on top.
