Vegetable Salad with Herbs and Corn

Ingredients

  • 2 corn cobs (cooked)
  • 3 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 0.5 Red chili pepper
  • 1 Garlic clove
  • 2 tbsp lemon juice
  • 2 tbsp white balsamic vinegar
  • 1 tsp agave syrup
  • 4 handfuls wild herbs
  • 2 Tomatoes

Instructions

    Slice the corn into wide strips, brush with a little oil, season with salt and pepper, and grill over high heat until grill marks appear.

    For the dressing, wash, halve, deseed, and finely chop the chili pepper. Peel and finely chop the garlic. Combine both with the remaining oil, lemon juice, balsamic vinegar, agave syrup, salt, and pepper, then taste and adjust seasoning.

    Rinse the herbs, shake dry, pluck smaller pieces as needed. Wash the tomatoes, quarter them, and dice.

    Arrange all salad ingredients on plates or a platter and drizzle the dressing over them. Place the grilled corn on top of the salad.
