Zucchini Salad

Ingredients

  • 1 small zucchini
  • 2 beef tomatoes
  • 0.25 bunch coriander
  • 1 lemon (juiced)
  • 50 g green olives (pitted)
  • 50 g black olives (pitted)
  • Salt
  • Pepper

Instructions

    Wash and trim the zucchini, then cut into sticks.

    Remove stems from the tomatoes, blanch them briefly, peel, halve, seed, and dice them.

  3. 3.

    Wash the coriander, shake dry, finely chop the leaves. Cut the olives into small pieces.

  4. 4.

    Combine all ingredients in a bowl, season with salt and pepper, taste and adjust seasoning as needed, then serve garnished with fresh coriander.
