Ingredients
- 4 pickles
- 1 large apple
- 350 g cooked beetroot
- 2 tsp freshly grated horseradish
- 2 tbsp chives
- Salt
- black pepper (freshly ground)
- 50 ml pickle brine

Drain the pickles and slice them into very thin rounds. Wash the apple, quarter it, core it, and cut it into very thin slivers or sticks. Peel the beetroot if desired and cut it into strips.

Combine the pickles, apple, and beetroot in a bowl; stir in the horseradish and chives, season with salt, pepper, and pickle brine, then serve arranged on small bowls. Cottage cheese pairs well with this dish.
