Mango Rose Salad with Fig Hearts

- 250 dried figs
- 100 g dried bananas
- 100 g peeled almond kernels
- 80 g pistachios (unsalted)
- 1 cardamom pod
- 250 g ground hazelnuts
- 1 tsp Honey
- Rose water
- 2 large mangoes
- organic rose petals (unsprayed)

Finely chop the dried figs and bananas. Roughly chop the peeled almonds and pistachios. Coarsely crush the cardamom pod in a mortar. Mix the dried fruit with the almonds, pistachios, ground hazelnuts, cardamom, and honey thoroughly.

Add a few drops of rose water and knead everything into a sticky dough. If the dough is too tacky, add more ground hazelnuts if desired. Wrap the mixture in cling film and place it in the freezer for half an hour. Meanwhile, peel the mangoes and cut them into fine strips.

After about half an hour, remove the dough from the freezer and roll it out on parchment paper brushed with water to a thickness of about 0.5 cm using a wet rolling pin. Cut out heart shapes and place them on a rack to dry.

Roll each heart separately and cut them individually so that the dough sticks least. Let the hearts dry for about 15 minutes (or longer if desired) and serve in small bowls on top of mango strips garnished with rose petals.
