Zucchini Quiche

Ingredients
- 2 Zucchini
- 4 Spring Onions
- 2 fresh garlic cloves
- 3 tbsp olive oil
- Salt
- pepper (ground)
- 150 g filo dough
- 200 g Feta Cheese
- 1 Tbsp freshly chopped thyme
- 200 ml whipping cream
- 2 Eggs
- 60 g grated cheddar

Wash, trim and dice the zucchini. Wash, trim and slice the spring onions into rings. Peel and finely chop the garlic cloves. In a hot pan sauté everything together in 1 tbsp oil for 1-2 minutes. Remove from heat, season with salt and pepper, and let cool.

Preheat the oven to 180°C (356°F) fan‑forced. Line a quiche tin with oil and lay overlapping sheets of filo dough on it. Brush each sheet with oil and leave the edges slightly overhanging. Evenly spread the vegetables in the tin and crumble the feta over them. Sprinkle with thyme. Whisk together the cream, eggs, pepper and a pinch of salt for the custard. Pour over the vegetables, sprinkle with cheddar and gently press the edge over it. Bake in the oven for about 35 minutes until golden brown.

Remove from the oven, let rest for a few minutes, then cut into pieces and serve.
