Mangoldkuchen

Ingredients
- 250 g flour
- 1 egg
- Salt
- 750 g Swiss chard
- 3 spring onions
- 4 Sage leaves
- 2 tbsp oil
- salt (pepper)
- nutmeg
- 200 g ricotta
- 100 g whipping cream
- 2 Eggs
- 50 g pine nuts (peeled)
- 50 g grated hard cheese
- flour (for work surface)
- butter (to grease pan)
Instructions

Sift the flour onto a floured work surface and press a well into the center. Add the egg and a pinch of salt to the well, then sprinkle butter in small pieces on top. Using a knife, mix thoroughly and quickly knead into a smooth dough. Chill for at least 40 minutes.

Wash the Swiss chard and cut the leaves into strips. Dice the stems finely. Wash and chop the spring onions and sage leaves.

Heat oil in a large pot. Add the diced chard stems, sage, and spring onions; sauté while stirring.

Add the chard leaves and let them wilt. Season heavily with salt, pepper, and nutmeg.

Preheat the oven to 200 °C (392 °F). Roll out the dough on a lightly floured surface and line a greased springform pan of about 30 cm diameter with it. Prick the bottom several times with a fork.

Whisk ricotta with eggs and cream. Season well with salt, pepper, and nutmeg. Pour the mixture over the chard in the pan. Bake for 30 minutes. Sprinkle grated cheese and pine nuts on top and bake another 15 minutes.
