Shrimp and Swiss Chard Quiche

Ingredients

  • 250 g shrimp (frozen)
  • 1 large Swiss chard bundle
  • 2 onions
  • 1 Garlic clove
  • 2 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 4 eggs
  • 200 g Sour Cream
  • 100 g grated Emmental cheese
  • 50 g freshly grated Parmesan cheese
  • nutmeg

Instructions

    In a bowl combine flour, salt, cubed butter and egg. Add 1-2 tbsp cold water and knead quickly with hands into a smooth dough. Wrap in plastic wrap and chill for about 30 minutes.

    Thaw the shrimp. Wash and trim the Swiss chard; cut leaves from stems and dice 2-3 stems finely. Reserve remaining stems for another use. Slice leaves into strips. Peel and dice onions and garlic. Sauté onions with diced stems in hot oil until translucent. Add garlic and leaf strips, season with salt and pepper, cook gently for about 5 minutes while stirring. Remove from heat and let cool slightly. Rinse shrimp and pat dry.

    Preheat oven to 200°C (400°F) fan‑forced. Roll dough on a floured surface to fit the pan, place it in the pan and form a rim. Whisk eggs with sour cream and both cheeses. Season with salt, pepper and nutmeg. Spread vegetables over the crust, top with shrimp, pour egg mixture over everything. Bake for about 45 minutes until golden brown.
