Zucchini Patties

Ingredients
- 400 g zucchini
- Salt
- 400 g starchy cooking potatoes
- 2 Eggs
- 3 tbsp starch
- Salt
- pepper (ground)
- 1 tbsp chopped mint
- 4 tbsp Vegetable oil
- 4 tomatoes
- 2 sprigs Mint
- 3 tbsp white balsamic vinegar
- 1 tbsp Olive Oil
- a pinch of sugar
Instructions

Wash the zucchini and grate it coarsely. Sprinkle lightly with salt and set aside. Peel the potatoes, grate finely and squeeze out excess moisture in a cloth. Also squeeze out the liquid from the grated zucchini. Combine the potatoes and zucchini in a bowl. Mix in the eggs and starch, seasoning with salt, pepper and chopped mint.

Heat oil in a large non-stick skillet. Using a spoon, drop small mounds of the mixture into the oil and fry each side 3-4 minutes until golden brown. Transfer the finished patties to paper towels to drain excess fat and keep warm in an oven at 80°C if desired.

Wash the tomatoes, quarter them and remove the stems. Wash the mint and pluck the leaves. Combine both with vinegar and oil, seasoning with salt and sugar to taste.

Serve the zucchini patties with the tomato salad.
