Ingredients
- 480 g perch fillet (4 fillets; skinless)
- Salt
- freshly ground pepper
- 4 tomatoes
- 3 shallots
- 2 Garlic cloves
- 250 ml milk
- 4 tbsp white wine (preferably dry Riesling)
- chicken broth (or beef broth)
- 4 tbsp chopped parsley
- Lemon juice

Preheat the oven to 180 °C. Wash and pat the perch fillets dry, then season with salt and pepper. Score the tomatoes crosswise, blanch them, peel, quarter, seed, and chop finely. Peel and dice the shallots and garlic.

Combine shallots, garlic, milk, wine, and broth in a roasting pan. Place the fish inside and bake covered on the middle rack for 15 to 20 minutes.

Remove the fish from the oven, add the tomatoes and parsley, and season with salt, pepper, and lemon juice. Serve with potato mash or baguette.
