Ingredients
- 400 g spaghetti
- Salt
- 2 zucchinis
- 2 Garlic cloves
- 1 untreated lemon
- 3 tbsp olive oil
- 1 tsp sugar
- black pepper (freshly ground)
- a handful parsley
- 50 g grated cheese (e.g., Pecorino)
Instructions

Cook the spaghetti in salted water until al dente.

Wash, peel, and dice the zucchinis. Peel and finely chop the garlic. Zest the lemon and squeeze out the juice. Sauté the zucchini cubes with garlic in hot oil for 1–2 minutes, sprinkle with sugar, and let lightly caramelize. Deglaze with lemon juice and a splash of pasta cooking water, season with salt and pepper, and simmer briefly.

Toss the drained noodles into the sauce, add grated cheese, and stir to combine. Sprinkle chopped parsley on top.
