Ingredients

  • 400 g whole wheat pasta (corned or macaroni)
  • Salt
  • 3 shallots
  • 1 Garlic clove
  • 1 tbsp Rapeseed Oil
  • 100 g Gouda (1 piece)
  • 100 g Emmental (1 piece)
  • 4 eggs
  • 200 ml whipping cream
  • white pepper
  • nutmeg

Instructions

    Cook the pasta according to package instructions in plenty of boiling salted water until al dente, drain and set aside.

    Peel and finely chop the shallots and garlic. Heat oil in a pan. Add the shallots and garlic and sauté for 3 minutes over medium heat until translucent. Remove from heat.

    Grate both cheeses finely. Whisk the eggs with the cream. Stir in the shallots, garlic, and three‑quarters of the cheese, seasoning with salt, pepper, and nutmeg. Mix in the pasta. Transfer everything to a baking dish. Sprinkle the remaining cheese on top and bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 45 minutes. Remove and serve warm.
