Zucchini Noodles with Radicchio

The zucchini noodles with radicchio from Spoonsparrow are quick to make and truly slimming!

Ingredients

  • 30 g pine nuts
  • 2 radicchio
  • 600 g zucchini
  • 1 Garlic clove
  • 1 tbsp Olive Oil
  • 1 Organic lemon
  • 1 tbsp walnut oil
  • Salt
  • Pepper

Instructions

    Roast the pine nuts in a large pan until fragrant. Remove and let cool. Wash the radicchio and cut into about 1 cm wide strips. Wash and trim the zucchini. Using a spiralizer, cut into fine linguine strands. Peel and finely chop the garlic. Rinse the lemon under hot water and pat dry. Grate the zest finely and squeeze out the juice.

    Reheat the pine nut pan and add the olive oil. Add the garlic and radicchio and sauté over low heat for 1–2 minutes. Remove from the stove and add the zucchini, lemon juice, lemon zest and walnut oil. Season with salt and pepper to taste. Divide onto two plates and sprinkle with pine nuts.
