Zucchini Noodles

These delicious zucchini noodles from Spoonsparrow come entirely plant‑based and taste great every time!

Ingredients

  • 2 Zucchini
  • 3 tomatoes
  • Salt
  • Pepper (freshly ground)
  • 3 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • 100 g spaghetti (optional)

Instructions

    Wash and trim the zucchini, then slice thinly and long like spaghetti using a mandoline, vegetable peeler, or knife. Cook the spaghetti in salted water until al dente; 2 minutes before it’s done add the zucchini noodles, cook together briefly, then drain and set aside.

    Wash the tomatoes and dice them finely.

    Combine balsamic vinegar, olive oil, salt, and pepper in a small bowl.

    Season the zucchini noodles (and spaghetti if using) with salt and pepper, drizzle with the dressing, top with diced tomatoes, divide onto two plates, and serve.
