Pasta with Peas and Parma Ham

Ingredients
- 350 g spaghetti
- Salt
- 1 kg green peas
- 130 g Parma ham (sliced)
- 6 Spring Onions
- 2 Garlic cloves
- 2 tbsp olive oil
- 100 ml dry white wine
- Pepper
- 20 g Parmesan (1 piece)

Cook pasta in salted water according to package instructions until al dente.

While the pasta cooks, blanch peas in boiling salted water for about 5 minutes. Drain, shock with cold water and set aside.

Meanwhile slice the ham into strips. Wash and trim the spring onions; cut the white part into thin rings and the green part into 2 cm pieces. Peel and finely chop the garlic.

Heat oil in a pan. Sauté garlic and spring onions for 1–2 minutes over medium heat until translucent. Add ham and peas, then deglaze with wine. Reduce almost completely, season with salt and pepper.

Drain pasta, let it dry slightly, then combine with the vegetable mixture. Divide among four bowls, sprinkle parmesan on top, and serve immediately.
