Ingredients

  • 800 g Zucchini
  • 2 tbsp olive oil
  • 350 g turkey ham (sliced)
  • 2 stems basil
  • 60 g pumpkin seeds
  • Salt
  • 3 tbsp Lemon juice
  • Sichuan pepper

Instructions

    Wash, trim and slice the zucchini into thin sticks or shave them. Heat the olive oil in a pan. Sauté the zucchini over medium heat for 1–2 minutes. Transfer to a bowl and let it cool slightly.

    Meanwhile, cut the turkey ham into wide strips. Wash the basil, shake off excess water, pluck the leaves and roughly chop all but a few whole leaves.

    Toast the pumpkin seeds in an empty pan until fragrant.

    Combine the zucchini, ham, chopped basil, salt, lemon juice and Sichuan pepper in a bowl. Toss gently. Sprinkle with toasted pumpkin seeds and remaining basil before serving.
