Kale Salad with Carrots

Ingredients

  • 600 g fresh kale
  • Salt
  • 1 tart apple
  • 300 g carrots
  • 1 tsp lemon juice
  • 2 oranges
  • 150 g Sour cream
  • Pepper
  • 4 tbsp peeled sunflower seeds

Instructions

    Strip the kale from the stems, wash thoroughly and drain on a sieve. Cut the kale leaves into narrow strips.

    Bring plenty of salted water to a boil. Add the kale strips and simmer over medium heat for 10 minutes.

    Drain the kale, shock the strips under cold water and let them dry well in a sieve.

    Wash the apple, quarter it, remove the core and cut the flesh into fine strips or julienne. Drizzle with a little lemon juice and mix well.

    Peel the carrots and cut into fine strips. Boil in salted water for about 5 minutes. Drain, shock under cold water and dry well.

    Peel the oranges thoroughly, removing the white pith as well. Separate the segments, cut them small and catch the released juice.

    For the dressing whisk sour cream with 1 tbsp orange juice, season with salt, pepper and a splash of lemon juice.

  8. 8.

    Combine kale with carrot and apple strips, orange fillets and the sour cream dressing. Season the salad with pepper and salt and sprinkle with sunflower seeds before serving.
