Cherry Tomatoes and Mini Mozzarella in Marinade

Cherry tomatoes and mini mozzarella in a Spoonsparrow-inspired marinara bring spring to the plate in no time.

Ingredients

  • 200 g mini mozzarella balls
  • 300 g cherry tomatoes
  • 0.5 bunch arugula (or basil, about 40 g)
  • 200 ml extra-virgin olive oil
  • Salt
  • ground pepper

Instructions

    Drain the mozzarella balls in a sieve. Wash and dry the cherry tomatoes. Rinse, wash, and shake off excess water from the arugula; trim the stems slightly.

    Arrange the mozzarella balls, tomatoes, and arugula into four jars. Pour the olive oil over them, cover, and refrigerate overnight. Use within 2 days. Season with salt and pepper just before serving.
