Ingredients

  • 4 zucchini
  • 1 large potato (starchy, cooking)
  • 2 Eggs
  • 4 tbsp flour
  • Salt
  • Pepper
  • oil (for frying)
  • 2 cups yogurt
  • 4 tbsp thick milk
  • 2 Garlic cloves
  • 1 tbsp Lemon Juice
  • 1 tbsp mint
  • Salt

Instructions

    Wash the zucchini, trim the ends and grate it. Peel and grate the potato as well. Beat the eggs with the flour, seasoning with salt and pepper. Squeeze out excess moisture from the grated vegetables using a kitchen towel and fold them into the batter. Heat oil in a pan and pour portions of the mixture into the pan, flattening each patty; fry for about 4 minutes on each side.

    Mix yogurt and thick milk for the sauce. Peel and press the garlic cloves into the mixture. Stir in salt, lemon juice, and mint leaves, then serve alongside the fritters.
