Ingredients

  • 300 g zucchini
  • 400 g Potatoes
  • 300 g carrots
  • 2 Eggs
  • 1 tbsp whole wheat flour
  • Salt
  • Pepper
  • nutmeg
  • 3 tbsp rapeseed oil (for frying)
  • 0.5 bunch herbs (e.g., parsley, chives)

Instructions

    Peel and wash the zucchini, then grate it. Peel, wash, and grate the potatoes and carrots as well. Place the grated vegetables in a kitchen towel and squeeze out excess liquid. Mix everything with eggs and flour. Season with salt, pepper, and nutmeg.

    Heat oil in a pan and drop 1 tbsp of batter for each patty, smoothing it out. Fry on both sides until golden yellow over high heat for about 2–3 minutes. Keep the finished patties warm in an oven at 70 °C (fan: 50 °C; gas: level 1).

    Meanwhile wash the herbs, shake dry and finely chop them. Arrange the zucchini-carrot patties on a plate and sprinkle with herbs before serving.
