Zucchini and Apple Salad with Walnut Sauce

Ingredients

  • 4 zucchini
  • 2 Apples
  • 150 g yogurt
  • 5 tbsp walnut kernels
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 0.5 lemon (juice)
  • 2 tbsp parsley (chopped)
  • Salt
  • Pepper (freshly ground)

Instructions

    Wash and trim the zucchini, halve lengthwise, then slice into rounds.

    Wash the apples, quarter them, remove cores, and slice similarly. Blanch both together in salted water for 1–2 minutes until just firm. Shock in ice water and drain.

    Coarsely chop 1 tbsp of walnut kernels; finely mince the rest. Mix with minced garlic, yogurt, olive oil, parsley, lemon juice, salt, and pepper to taste.

    Arrange zucchini and apple slices on plates, pour sauce over them, and sprinkle remaining walnuts before serving.
