Ingredients

  • 400 g fusilli
  • Salt
  • 50 g sun‑dried tomatoes (packed in oil)
  • 1 Red Onion
  • 2 yellow bell peppers
  • 1 Garlic clove
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp freshly chopped parsley
  • Cayenne pepper

Instructions

    Cook the fusilli in salted water until al dente, then rinse under cold water and drain. Drain the sun‑dried tomatoes well and roughly chop them. Peel the onion, halve it, and slice into thin strips. Wash the bell peppers, halve them, remove seeds, and dice finely. Peel the garlic clove and mince very finely.

    Whisk together olive oil, lemon juice, and parsley in a bowl; season with salt and cayenne pepper. Toss all prepared salad ingredients together and adjust seasoning to taste.
