Ingredients

  • 0.5 cucumber
  • Salt
  • 250 g Greek yogurt
  • 1 Garlic clove
  • pepper (ground)
  • 150 g flour
  • 1 heaping tsp baking powder
  • 0.5 tsp Salt
  • 250 ml milk
  • 2 Eggs
  • clarified butter (for frying)
  • 150 g sun‑dried tomatoes (in oil)
  • fennel fronds

Instructions

    Peel the cucumber, cut it lengthwise in half, remove the seeds and finely grate or dice it. Salt it and let it sit for about 10 minutes to draw out water. Then drain well and squeeze out excess liquid with your hands before adding it to the yogurt and stirring. Peel the garlic and press it into the mixture. Season with salt and pepper.

    For the batter, whisk together the flour, baking powder, salt, and milk until smooth. Beat in the eggs. The batter should be thick; adjust with more or less milk if needed.

    In a lightly oiled non‑stick skillet, fry small pancakes about 15 seconds each side in hot clarified butter. Place spoonfuls of dough into the butter and cook each side for 1–2 minutes until golden brown.

    Top each pancake with a dollop of tzatziki and place one drained tomato slice on top. Garnish with fennel fronds before serving.
