Goat Cheese Wrapped in Zucchini

Ingredients

  • 1 Zucchini
  • Salt
  • 350 g goat cheese (roll)
  • Pepper (freshly ground)
  • 4 Tbsp sunflower oil
  • 2 Tomatoes
  • 0.5 Avocado
  • a handful of wild garlic
  • 3 tbsp white balsamic vinegar
  • 2 fresh garlic cloves

Instructions

    Wash the zucchini, trim the ends and slice lengthwise into thin strips or shave them. Briefly blanch in salted water, rinse, and pat dry. Cut the cheese into 4 slices and wrap each over about 6 zucchini strips. Season with salt and pepper and carefully fry in 2 tbsp hot oil in a pan for about 5 minutes on both sides until the cheese begins to melt.

    For the vinaigrette, wash the tomatoes, quarter them, remove seeds, and dice finely. Peel the avocado, discard the pit, and dice similarly. Wash the wild garlic, trim it, roughly chop, and puree with 2–3 tbsp water. Strain through a fine sieve, then mix with the remaining oil, vinegar, salt, and pepper to taste. Fold in the avocado and tomato cubes.

    Peel and finely mince the garlic. Add it to the zucchini parcels during the last ~2 minutes of cooking and allow it to brown slightly. Plate the parcels, drizzle the vinaigrette around them, and serve.
