Cinnamon Star-Shaped Donuts

Ingredients
- 0.5 cube yeast (21 g)
- 125 ml lukewarm milk (3.5% fat)
- 250 g Spelt flour Type 630
- 1 tbsp spelt flour type 630 (for handling)
- 1.5 tsp cinnamon
- a pinch of salt
- 2 tbsp raw cane sugar (20 g each)
- 1 egg
- 3 tbsp liquid butter (15 g each)
- vegetable oil (for frying)
- 200 g milk couverture chocolate
- 70 g hazelnut kernels

Crush the yeast and dissolve it in the lukewarm milk. In a mixing bowl combine flour, cinnamon, a pinch of salt, sugar, egg, and butter. Add the yeast mixture and knead with hands for 5 minutes until smooth; add more flour or milk if needed. Cover dough and let rise for about 30 minutes.

On a lightly floured surface knead the dough again and roll it out to about 1 cm thickness. Use a star cutter to cut 12 stars. With a spoon handle, cut a small circle in the center of each star. Cover the pieces with a cloth and rest for another 30 minutes.

Heat plenty of oil in a large pot to about 175 °C. Fry the dough stars in batches for 4–5 minutes until golden brown, turning once. Drain on paper towels and cool on a wire rack for 10 minutes.

Meanwhile, chop the couverture into pieces and melt over a double boiler, then let it cool slightly. Chop the hazelnuts. Dip the cinnamon donuts into the chocolate until fully coated, sprinkle with chopped hazelnuts, and allow to dry.
