Ingredients

  • 30 g Kamut
  • 150 g goat fresh cheese
  • 2 stems Mint
  • Salt
  • Pepper (freshly ground)
  • Lemon juice
  • 250 g strawberries
  • 1 Shallot
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 tbsp Lemon Juice
  • 1 tbsp raspberry vinegar
  • 1 tsp chili flakes
  • 4 small red chilies

Instructions

    Wash the Kamut and simmer it in double the amount of water for about 30 minutes. Drain and combine with the cheese in a bowl. Wash the mint, shake dry, pluck the leaves (leaving some for garnish), finely chop, add to the mixture and season with salt, pepper, and a splash of lemon juice.

    Wash, clean, and dice the strawberries. Peel and finely chop the shallot; sauté it in hot oil until translucent. Add the strawberries, sprinkle sugar over them, then deglaze with lime juice and vinegar. Season with salt and pepper, bring to a brief boil, pour into glasses, and let cool.

    Form small balls from the goat cheese mixture, place them on top of the salsa, and sprinkle with chili flakes. Garnish with mint leaves and a sliced red chile if desired before serving.
