Ingredients

  • 2 egg whites
  • 0.5 untreated lemon (zest and juice)
  • 2 tbsp powdered sugar
  • 50 g ground almonds (peeled)
  • powdered sugar for dusting
  • 500 g strawberries
  • 5 tbsp apple juice
  • 2 tbsp sugar
  • 3 egg yolks
  • 2 tbsp vanilla sugar
  • 100 ml Maiwipfel liqueur

Instructions

    Preheat the oven to 200°C fan.

    Whisk the egg whites with 1 tbsp lemon juice and zest until stiff. Add powdered sugar and whisk again until stiff. Fold in almonds and spread the mixture thinly on a parchment-lined baking sheet. Bake for 10-15 minutes until lightly golden. Remove from the pan, cool on paper, dust with powdered sugar, and break into pieces.

    Wash, clean, and dice the strawberries. Mix with apple juice and sugar; let sit for about 15 minutes.

    Meanwhile, whisk the egg yolks with vanilla sugar until creamy. Over a hot but not boiling water bath, slowly pour in the Maiwipfel liqueur while whisking continuously until the zabaione becomes creamy and airy.

    Arrange strawberries on plates, place a spoonful of zabaione over each, and garnish with almond crumbs before serving.
