Fried Asparagus with Strawberry Mascarpone Dessert

- 30 g Butter
- 1 egg
- 1 pinch salt
- 1 tbsp sugar
- 1 tsp vanilla sugar
- 125 g flour
- 125 ml wine
- 400 g white asparagus
- 0.5 lemon (juice)
- vegetable oil (for frying)
- 200 g strawberries
- 1 Tbsp vanilla sugar
- 1 tbsp dried cherries
- 200 g mascarpone
- 4 tbsp rhubarb syrup (or elderflower syrup)
- 1 tbsp Lemon Juice
- 100 ml whipping cream

Melt the butter and let it cool slightly. Separate the egg, placing the whites in a cold bowl. Whisk together the yolk with salt, sugar, vanilla sugar, flour, wine, and butter. Cover and let rise for about 20 minutes.

While the batter rises, wash and pat dry the strawberries. Slice one strawberry for garnish. Clean the remaining strawberries, dice them, and mix with sugar. Chop the cherries finely. Whisk mascarpone with syrup and lemon juice. Beat cream until stiff peaks form. Fold 2-3 tbsp of strawberry cubes and cherries into the mascarpone mixture, then fold in the whipped cream. Fill four glasses with leftover strawberries, top with the cream, garnish with strawberry slices, and refrigerate.

Wash, peel, and blanch the asparagus in sparkling water with lemon juice for about 8 minutes until very firm. Drain, shock in cold water, dry on paper towels.

Beat egg whites very stiff and fold into the batter. Heat oil to 170-180°C. Dip asparagus spears through the batter and fry until golden brown, 5-10 minutes. Drain on paper towels and keep warm at 80°C fan oven if desired until all are fried.
