Yogurt Cream with Strawberries

Ingredients

  • 5 sheets gelatin
  • 600 g yogurt
  • 100 g powdered sugar
  • 500 g Heavy Cream
  • 200 g strawberries
  • Juice of 1 lime
  • 3 sheets gelatin
  • 200 g strawberries
  • 50 g sugar
  • 250 g strawberries
  • 2 sprigs Mint

Instructions

    Soak gelatin for the sauce, wash strawberries, puree them, stir in sugar and gently warm everything. Dissolve the squeezed gelatin into the sauce, whisk cold until the sauce begins to gel.

    For the cream soak gelatin, mix yogurt with powdered sugar. Whip cream stiffly. Wash 100 g strawberries, trim and cut into thick slices; puree the rest. Heat lime juice, dissolve the squeezed gelatin in it and immediately stir into the yogurt, then fold in the pureed strawberries. Gradually whisk in the whipped cream.

    Cover the mold base with the sauce, line with strawberry slices, fill with cream and chill for at least 3 hours. For skewers, trim, wash, pat dry the strawberries and alternately thread them onto sticks with mint leaves. Spoon the cream onto a plate and garnish with a strawberry skewer.
