Ingredients

  • 6 fresh egg yolks
  • 100 g powdered sugar
  • 1 pinch salt
  • 120 ml Marsala (semisecco)
  • 8 large ripe strawberries
  • 0.5 packet Bourbon vanilla sugar
  • Löffelbiskuit

Instructions

    Wash and clean the strawberries; quarter four of them, mix with vanilla sugar, and distribute onto four glasses or bowls. Set aside the remaining four strawberries. In a metal mixing bowl, combine egg yolks, powdered sugar, salt, and 1 tbsp water, then whisk over a hot water bath using a hand mixer until frothy.

    Gradually pour in the Marsala while continuing to whisk vigorously. Taste the zabaione, cool it over an ice bath, then fill the four prepared glasses and garnish each with one strawberry. Serve with Löffelbiskuit.
