Strawberry Mousse with Agar-Agar

Spoonsparrow strawberry mousse: whipped cream makes this summer dessert light and creamy at the same time!

Ingredients

  • 500 g fresh strawberries
  • 3 tbsp raw cane sugar
  • 0.25 tsp vanilla powder
  • 250 g heavy cream
  • 200 g Sour Cream
  • 1 tbsp Lemon Juice
  • 1 tsp agar-agar

Instructions

    Clean, wash and quarter the strawberries; set aside 50 g for garnish and finely puree the rest with sugar. Strain through a sieve. Whip the heavy cream until stiff peaks form, then fold in 350 g strawberry purée, sour cream, and lemon juice. Chill remaining purée.

    Cook agar-agar in 50 ml water over constant stirring for 2 minutes. Remove 3 tbsp of the strawberry‑cream mixture and stir into the agar. Then combine with the rest of the strawberry‑cream mixture thoroughly.
