- 4 egg yolks
- 60 g sugar
- 100 ml Marsala wine

Place the egg yolks with the sugar in a double boiler and whisk with a whisk.

Pour in the Marsala over a hot water bath while stirring.

Continue beating until the mixture becomes thick and foamy and its volume has doubled. To become white and creamy, a temperature between 70 and 75°C must be reached; this can take about 10 minutes.

Cool the mixture in a bowl of ice water while continuing to stir.

Transfer the finished Zabaione into a bowl or serve it over glasses. Serve the cream as soon as possible so that it does not settle again.
