Yogurt Mousse

Ingredients
- 300 g yogurt
- 100 g Sour cream
- 50 ml lemon juice
- 0.5 tsp grated lime zest
- 100 ml milk
- 75 g cane sugar
- 5 sheets white gelatin
- 150 g whipping cream
- lime zest
- 1 baby pineapple
- 10 g butter
- 1 tbsp honey

Whisk yogurt, sour cream, lemon juice, lime zest, milk and cane sugar until smooth. Soak gelatin in cold water, then dissolve it in a small pot over low heat, stirring thoroughly with the lemon mixture, and refrigerate for about 30 minutes. Whip cream to stiff peaks. When the mixture thickens, fold in the whipped cream. Pour the yogurt mousse into dessert cups and chill until set.

Slice the baby pineapple very thinly, place in a medium-hot buttered pan, drizzle with honey, and caramelize the slices on both sides until golden brown.

Serve by pouring the mousse over the warm pineapple slices, garnishing with lime zest and remaining pineapple pieces.
