Blackcurrant Slices

Ingredients
- 250 g soft butter
- 250 g sugar
- 1 untreated orange (zest)
- 5 eggs
- 1 pinch salt
- 400 g flour
- 100 g Ground Almonds
- 2 tsp Baking powder
- 200 ml milk
- 80 g chocolate shavings
- 500 g blackcurrants
- 400 ml whipping cream
- 2 packets gelatin
- 2 tbsp vanilla sugar
- 20 ml Cassis
- 50 g orange marmalade

Preheat the oven to 180°C fan. Line a baking tray with parchment paper.

For the dough, beat butter with sugar and orange zest until fluffy. Gradually fold in eggs. Mix flour, almonds and baking powder; alternately whisk into the butter mixture with milk to form a smooth, spreadable batter. Stir in chocolate shavings and spread evenly on the tray. Bake for about 40 minutes until golden brown (test with a skewer).

For the topping, rinse blackcurrants, pat dry and remove stems. Whip cream with gelatin, vanilla sugar and cassis until stiff.

Remove cake from oven and brush warm with marmalade. Let cool completely. Sprinkle currants over the cake, pour cassis‑cream on top and smooth. Slice into pieces to serve.
