Ingredients

  • 2 pears
  • 2 tbsp lemon juice
  • 30 g sugar
  • 1 star anise
  • 40 ml dry white wine
  • 10 g ginger
  • 50 g candied ginger
  • 20 g honey
  • 300 g yogurt
  • 150 ml Heavy Cream

    Wash, peel, dice the pears and drizzle with lemon juice. In a pan caramelize the sugar with the star anise. Add the pears and mix with the caramel. Deglaze with white wine and simmer for about 5 minutes. Remove from heat and let cool completely.

    Peel and finely grate fresh ginger. Chop candied ginger small. Mix fresh and candied ginger with pear confit and honey into the yogurt. Whip the cream stiff and fold in. Pour mixture into a shallow metal container and freeze for about 4 hours, stirring vigorously every 30 minutes or finish in an ice cream maker.
