Yogurt Mango Cream

Ingredients
- 150 g mixed fresh berries (e.g., raspberries, currants)
- 1 small very ripe Thai mango
- 2 tbsp lemon juice
- 150 g Yogurt (1.5% fat)
- 2 tsp Honey
- 150 g whipping cream
- 2 tsp chocolate shavings (for garnish)
- mint or lemon balm leaf (for garnish)

Rinse the berries, wash them and drain thoroughly. Peel the mango with a knife and cut the flesh away from the pit. Puree the mango flesh with lemon juice finely and then strain through a fine sieve. Stir in the yogurt and sweeten the mixture with honey.

Whip the cream until stiff peaks form and fold it into the mousse. Spoon some of the mousse into four tall dessert glasses, spread two-thirds of the berries on top, and fill the glasses with more mousse. Chill until ready to serve. Before serving sprinkle the remaining berries over the mousse in the glasses, dust the desserts with chocolate shavings, and garnish with washed mint or lemon balm leaves.
