Yogurt Ice Cream with Apples in Vanilla Butter

Ingredients
- 1 untreated lemon
- 100 ml heavy cream
- 1 tbsp honey
- 300 g cream yogurt
- 2 Vanilla Beans
- 30 g Butter
- 500 g Boskop apple
- 2 tbsp apple syrup
- juice of 2.5 oranges (0.125 l)
- 30 g walnut kernels

Wash the lemons hot and dry them. Grate the zest of half a lemon finely, squeeze the fruit, measure out 5 tbsp juice.

Heat the cream, dissolve honey in it. Stir in lemon juice, zest and yogurt. Freeze the mixture for 1 hour in an ice cream maker while stirring. Remove the ice cream from the machine and cover it before placing it in the freezer. Take it out about 15 minutes before serving and put it in the refrigerator.

Slice vanilla beans lengthwise and scrape out the seeds.

Melt butter in a pan. Stir in vanilla seeds.

Wash apples, quarter them, remove cores and cut quarters into strips. Sauté apple strips on both sides in vanilla butter.

Pour in apple syrup and orange juice and cook apples for about 5 minutes. Reduce the liquid to a syrupy consistency while cooking.

Crush walnut kernels roughly. Portion the ice cream with an ice cream scoop onto dessert plates. Add the hot apples on top and sprinkle with walnuts before serving.
