Ingredients

  • 2 egg whites
  • 1 tsp lemon juice
  • 120 g powdered sugar
  • 1 Egg white
  • 1 tsp lemon juice
  • 60 g powdered sugar
  • 100 ml whipping cream
  • 50 g candied ginger
  • 150 g cream cheese (double cream)
  • 250 g yogurt

Instructions

    Preheat the oven to 100°C fan.

    Beat the egg whites with lemon juice until stiff, gradually adding powdered sugar. Whisk until glossy. Spread about 1 cm thick onto a parchment-lined baking sheet and bake in the preheated oven for about 1 hour until crisp. The meringue should stay as white as possible. Remove from oven and let cool on the tray.

    For the ice cream, beat an egg white with lemon juice to stiff peaks. Add powdered sugar and beat again. Whip the cream to stiff peaks. Chop the ginger and mix with cream cheese and yogurt until smooth. Fold in the whipped egg white and cream, then churn in an ice cream maker.

    Crush the meringue and fold into the creamy ice cream. Scoop into balls and serve.
