Yogurt Cream with Berries

Ingredients
- 300 g mixed berries (raspberries and blueberries)
- 2 sheets gelatin
- 150 ml blackcurrant juice
- 20 ml Cassis
- 0.5 untreated lemon (zest and juice)
- 2 tbsp honey
- 500 g plain yogurt
- 2 tbsp vanilla sugar
- 70 g powdered sugar
- 100 ml whipped cream

Wash the berries and drain well. Soak the gelatin in cold water. Bring the blackcurrant juice, cassis, lemon juice, and honey to a boil. Remove from heat, dissolve the pressed gelatin into the mixture, fold in 1/3 of the berries, and let cool. Chill for about an hour in the refrigerator.

Whisk the yogurt with lemon zest, vanilla sugar, and powdered sugar until smooth. Fold in stiffly whipped cream.

Take 2 tbsp of the berry compote, puree it, and stir into 1/3 of the yogurt.

Fill each glass with a layer of yogurt, top with more berry compote, scatter fresh berries, add a swirl of yogurt‑berry cream, and finish with remaining fresh berries.
