Blueberry Muffins

Ingredients

  • 200 g semolina
  • 75 g flour
  • 2 tsp Baking powder
  • 2 Eggs
  • 100 g sugar
  • 1 packet vanilla sugar
  • 2 tbsp orange liqueur
  • 1 tsp grated orange zest
  • 250 ml milk
  • 50 g butter
  • 200 g Blueberries
  • oil (for the muffin tin)
  • 4 tbsp whipping cream
  • 4 tbsp powdered sugar
  • 1 tbsp cassis

Instructions

    Preheat oven to 180°C fan, grease muffin tin and place in fridge.

    Combine semolina, flour and baking powder.

  3. 3.

    Whisk eggs with sugar, vanilla sugar, orange zest, milk and oil. Gradually fold in dry mixture and stir in blueberries.

    Fill muffin tin with batter and bake on middle rack for about 30 minutes. Remove, rest 5 minutes and cool on a wire rack.

    For glaze whisk cream, powdered sugar and cassis liqueur until smooth and coat muffins.
