Yeast Fruit Bread

Ingredients
- 125 g dried pears (and apricots)
- 50 g dried plums
- 50 g dried cherry halves
- 75 g chopped walnut kernels
- 60 ml lukewarm milk
- 1 cube fresh yeast
- 80 g sugar
- 100 g liquid butter
- 500 g flour
- 1 pinch salt
- 3 tsp grated orange zest
- 1 tsp gingerbread spice
- 100 g raisins
- 50 g candied orange peel (and lemon peel)
- 1 egg yolk
- 2 tbsp milk

Cut dried fruits and cherry halves into small cubes.

Stir the yeast in the milk with ½ tsp sugar until smooth.

Add flour to a mixing bowl, then add remaining sugar, salt, butter, orange zest, gingerbread spice and dissolved yeast; knead with an electric hand mixer’s dough hook until a dough forms. Fold in dried fruits, nuts, raisins, lemon peel and candied orange peel. Cover the dough and let rise for 45 minutes in a warm place.

Then knead the dough on a floured surface, shape into a loaf, and place it on a baking sheet lined with parchment paper. Let rise again for another 30 minutes in a warm spot.

Whisk the egg yolk with milk and brush the bread with this mixture. Bake in a preheated oven at 180°C (second rack from bottom) for about 1 hour 15 minutes. Remove and let cool.
