Yeast Cake

Ingredients
- 500 g flour
- 1 pinch salt
- 0.5 cube fresh yeast
- 80 g sugar
- 0.125 l lukewarm milk
- 1 egg
- 60 g Butter
- 1 untreated lemon (including zest)
- 150 g whole milk yogurt
- 1 tsp orange zest
- 1 tsp anise powder
- 125 g rum raisins
- 50 g chopped hazelnuts
- 40 g pine nuts
- flour (for rolling)
- fat (for the pan)
- 1 egg yolk
- 1 tbsp honey

Add flour and salt to a bowl, press a well in the middle, crumble yeast into it and mix with 1 tbsp sugar and 6 tbsp milk. Sprinkle some flour over the mixture. Cover the dough and let it rise in a warm place. Add the remaining sugar, egg, softened butter, lemon zest, yogurt and both spices.

Knead all ingredients with flour, pre‑rise dough, and enough milk to bring together, folding in raisins, nuts and pine nuts. Knead the dough and let it rise for about 1/2 hour in a warm place. Preheat oven to 200°C fan. Take one quarter of the dough and shape a round loaf from the remaining dough on a floured surface.

Shape six strands of 12 cm each from the taken dough, twist them into themselves and arrange star‑shaped on the loaf. Place the loaf in a greased springform (22 cm diameter), brush with egg yolk and bake for about 35 minutes.
